3 Quick and Healthy Summer Snacks

Now it’s (finally) summer, I thought it was only right to do some sort of summer baking/DIY! In summer, I usually prefer to have fruit/ something a bit lighter as a snack, especially if it’s really hot. I’ve come up with 3 quick and easy summer snack ideas or you can even have some for breakfast.

Watermelon Pizza:

I’ve seen these ALL over Pinterest so I thought I’d give it a go. This was probably the easiest of the three and really tasty, they would be perfect at a barbecue!

Ingredients:

  • Watermelon wedges
  • Natural yoghurt
  • Pomegranate seeds or your desired topping

Method:

Get your watermelon ‘slice’ and add around a tablespoon of yoghurt to it and then, using the back of the spoon, swirl around the watermelon up to the edge. Then, sprinkle over the pomegranate seeds or your chosen topping and enjoy!

Banoffee Bites:

These are essentially just banana and coffee frozen but they go so well together! They are also really refreshing and you can eat them straight out the freezer.

Ingredients:

  • A cup of coffee (I used a Nespresso)
  • Half a banana

Method:

Make your coffee and leave to one side. Then slice the banana into thick chunks before cutting in half again. Pop around 2 banana slices into an ice cube tray and then fill the rest up with coffee. Freeze for at least an hour.

Mango Sorbet:

This is really refreshing and easy to make. I love having this whilst watching some TV – especially Love Island!

Ingredients:

  • A handful of frozen mangos
  • 2 tablespoons of natural yoghurt
  • A sprinkle of oats and pomegranate

Method:

Blend the frozen mango and natural yoghurt until smooth. You may need to add more yoghurt until you get an ‘ice cream’ consistency. Pour into a bowl and then top with oats, pomegranate seeds or any other toppings (coconut flakes would go nicely).
